Stuffed Tomatoes
Ingredients
- 160 gm Tempeh
- 1 Medium tomato
- 1 tsp Apple cider vinegar
- 1 Clove garlic crushed
- 1 tbsp Coriander finely chopped
- 1 tbsp Spring onion finely chopped
- Pinch of cayenne pepper
Sauce
- 1/2 Clove of garlic crushed
- 1 tsp Chopped coriander
- Pinch cayenne pepper
- 1 tsp Chilli flakes
- Coriander to garnish
Instructions
- Pre-heat oven to 180° C. (160°c fan forced)
- Hollow out tomato reserving the insides to add to the sauce Mix the tempeh with the rest of the spices.
- Stuff the tomato with tempeh and bake for 20 -25 minutes.
- Puree Tomato insides with remaining sauce ingredients.
- Warm in a small pan for 2-4 min’s and pour over baked tomato Garnish with Coriander.
