Breakfast Mushrooms

Ingredients

  • 1 tbsp Diced onion
  • 1 tbsp Butter
  • 1 1/2 cups Baby spinach
  • 4 Large field mushrooms
  • 1/2 cup Grated zucchini
  • 100 gm Feta cheese, crumbled or grated
  • 1 tbsp Parsley, finely chopped

Instructions

  • Lightly fry diced onion in butter.
  • Add mushrooms, zucchini to the pan and fry lightly until mushrooms are cooked through.
  • Add spinach and cook until wilted.
  • Serve onto a warm plate, sprinkle with crumbled feta and
    parsley.
