Breakfast Mushrooms
Ingredients
- 1 tbsp Diced onion
- 1 tbsp Butter
- 1 1/2 cups Baby spinach
- 4 Large field mushrooms
- 1/2 cup Grated zucchini
- 100 gm Feta cheese, crumbled or grated
- 1 tbsp Parsley, finely chopped
Instructions
- Lightly fry diced onion in butter.
- Add mushrooms, zucchini to the pan and fry lightly until mushrooms are cooked through.
- Add spinach and cook until wilted.
- Serve onto a warm plate, sprinkle with crumbled feta andparsley.
