Stuffed Tomatoes

Ingredients

  • 160 gm Tempeh
  • 1 Medium tomato
  • 1 tsp Apple cider vinegar
  • 1 Clove garlic crushed
  • 1 tbsp Coriander finely chopped
  • 1 tbsp Spring onion finely chopped
  • Pinch of cayenne pepper

Sauce

  • 1/2 Clove of garlic crushed
  • 1 tsp Chopped coriander
  • Pinch cayenne pepper
  • 1 tsp Chilli flakes
  • Coriander to garnish

Instructions

  • Pre-heat oven to 180° C. (160°c fan forced)
  • Hollow out tomato reserving the insides to add to the sauce Mix the tempeh with the rest of the spices.
  • Stuff the tomato with tempeh and bake for 20 -25 minutes.
  • Puree Tomato insides with remaining sauce ingredients.
  • Warm in a small pan for 2-4 min’s and pour over baked tomato Garnish with Coriander.
