Chicken, Pear Walnut and Feta Salad

Ingredients

  • 2 Cups Salad Greens Rocket, Kale, Baby Spinach
  • 2 Sticks Celery Slices
  • 1/2 Red onion Finely Sliced
  • 1/2 Small Pear Cored and finely sliced
  • 1/4 Cup Walnuts
  • 1 tbsp Olive Oil
  • 2 tsp Good quality balsamic vinegar
  • 50 gm Feta Cheese Crumbled
  • 100 gm Chicken breast Cooked and shredded
  • Salt & Pepper to taste

Instructions

  • Place salad greens, celery, onion, pear & walnuts in a serving bowl.
  • Add olive oil & Balsamic & toss together to combine.
  • Divide between two plates & sprinkle feta cheese over the top.
  • Add chicken & season with salt & pepper to taste.
