Coriander to garnish
Instructions
Hollow out tomato reserving the pulp to add to the sauce.
Mince the prawns and add spices.
Stuff the tomato with prawns and bake for 20–25 minutes at 180°c (160°c Fan Forced).
Puree Tomato pulp with remaining sauce ingredients.
Warm in a small pan for 2-4 mins and pour over baked tomato.
Garnish with Coriander.
