Prawn Stuffed Tomato #2

Ingredients

  • 100 gm Peeled prawns
  • 1 Medium tomato
  • 1 tsp Apple cider vinegar
  • 1 Clove garlic crushed
  • 1 tbsp Coriander finely chopped
  • 1 tbsp Spring onion finely chopped
  • Pinch of cayenne pepper

Sauce

  • 1/2 Clove of garlic crushed
  • 1 tsp Chopped coriander
  • Pinch cayenne pepper
  • 1 tsp Chilli flakes
  • Coriander to garnish

Instructions

  • Hollow out tomato reserving the pulp to add to the sauce.
  • Mince the prawns and add spices.
  • Stuff the tomato with prawns and bake for 20–25 minutes at 180°c (160°c Fan Forced).
  • Puree Tomato pulp with remaining sauce ingredients.
  • Warm in a small pan for 2-4 mins and pour over baked tomato.
  • Garnish with Coriander.
