Preheat oven to 180⁰ C
Steam cauliflower until tender and set aside.
Heat olive oil in frying pan over medium heat, add onions, carrots, and celery, sauté until vegetables are soft and onion translucent.
Add mince and cook until brown.
Add the stock and cook until reduced to half the liquid, approx.
10 minutes, season with salt and pepper.

In a food processor or blender, pulse the cauliflower with 1 tsp olive oil until smooth and spread over the top of the mince.
Bake for approx. 20-30 minutes until browned on the edges and serve.
