Prawn Stuffed Tomato #2
Ingredients
- 100 gm Peeled prawns
- 1 Medium tomato
- 1 tsp Apple cider vinegar
- 1 Clove garlic crushed
- 1 tbsp Coriander finely chopped
- 1 tbsp Spring onion finely chopped
- Pinch of cayenne pepper
Sauce
- 1/2 Clove of garlic crushed
- 1 tsp Chopped coriander
- Pinch cayenne pepper
- 1 tsp Chilli flakes
- Coriander to garnish
Instructions
- Hollow out tomato reserving the pulp to add to the sauce.
- Mince the prawns and add spices.
- Stuff the tomato with prawns and bake for 20–25 minutes at 180°c (160°c Fan Forced).
- Puree Tomato pulp with remaining sauce ingredients.
- Warm in a small pan for 2-4 mins and pour over baked tomato.
- Garnish with Coriander.
