Paleo Shepherd’s Pie
Ingredients
- 1 Head cauliflower, trimmed and roughly chopped
- 1 tbsp Olive oil
- 1 Medium brown onion, finely chopped
- 1 Medium carrot, grated
- 1 Stalk celery, finely chopped
- 300 gm Minced beef
- 1/2 cup Beef stock
- Salt and Pepper to taste
Instructions
- Preheat oven to 180⁰ C
- Steam cauliflower until tender and set aside.
- Heat olive oil in frying pan over medium heat, add onions, carrots, and celery, sauté until vegetables are soft and onion translucent.
- Add mince and cook until brown.
- Add the stock and cook until reduced to half the liquid, approx.
- 10 minutes, season with salt and pepper.
- 10 minutes, season with salt and pepper.
- In a food processor or blender, pulse the cauliflower with 1 tsp olive oil until smooth and spread over the top of the mince.
- Bake for approx. 20-30 minutes until browned on the edges and serve.
