Paleo Shepherd’s Pie

Ingredients

  • 1 Head cauliflower, trimmed and roughly chopped
  • 1 tbsp Olive oil
  • 1 Medium brown onion, finely chopped
  • 1 Medium carrot, grated
  • 1 Stalk celery, finely chopped
  • 300 gm Minced beef
  • 1/2 cup Beef stock
  • Salt and Pepper to taste

Instructions

  • Preheat oven to 180⁰ C
  • Steam cauliflower until tender and set aside.
  • Heat olive oil in frying pan over medium heat, add onions, carrots, and celery, sauté until vegetables are soft and onion translucent.
  • Add mince and cook until brown.
  • Add the stock and cook until reduced to half the liquid, approx.
  • 10 minutes, season with salt and pepper.

  • In a food processor or blender, pulse the cauliflower with 1 tsp olive oil until smooth and spread over the top of the mince.
  • Bake for approx. 20-30 minutes until browned on the edges and serve.
