Egg White Omelette

  • 1 cup egg whites
  • 6 cherry tomatoes halved
  • 1 cup baby spinach
  • salt & pepper to season


  • Combine egg whites and pour into a non-stick frying pan on med-high heat.
  • Add tomatoes and spinach evenly over the top of the egg whites.
  • Allow egg whites to completely set, approx. 5-8 minutes.
  • Using a large spatula flip the sides of the egg white into an omelette and transfer on to a plate.
