Egg White Omelette
- 1 cup egg whites
- 6 cherry tomatoes halved
- 1 cup baby spinach
- salt & pepper to season
- Combine egg whites and pour into a non-stick frying pan on med-high heat.
- Add tomatoes and spinach evenly over the top of the egg whites.
- Allow egg whites to completely set, approx. 5-8 minutes.
- Using a large spatula flip the sides of the egg white into an omelette and transfer on to a plate.
