Chicken & Avocado Salad

Ingredients

  • 100 gm Chicken breast
  • 1 1/2 tsp Italian seasoning
  • Salt & pepper to taste

Salad

  • 2 cups Mixed greens Spinach, mesclun, rocket, kale
  • 1/2 tsp Olive oil
  • 1-2 tsp Lemon juice to taste
  • Sea salt & black pepper to taste
  • 1/4 Avocado
  • 7 Almonds, chopped
  • 70 mg Feta, crumbled

Instructions

  • In a frying pan, add olive oil.
  • Season both sides of chicken breast with sea salt, black pepper & Italian seasoning.
  • Add seasoned chicken to frying pan, brown both sides over medium-high heat.
  • Drizzle greens with combined olive oil, lemon juice, sea salt & pepper.
  • Serve and top with diced avocado, feta, almonds & sliced cooked chicken.
