Chicken & Avocado Salad
- 100 gm Chicken breast
- 1 1/2 tsp Italian seasoning
- Salt & pepper to taste
- 2 cups Mixed greens Spinach, mesclun, rocket, kale
- 1/2 tsp Olive oil
- 1-2 tsp Lemon juice to taste
- Sea salt & black pepper to taste
- 1/4 Avocado
- 7 Almonds, chopped
- 70 mg Feta, crumbled
- In a frying pan, add olive oil.
- Season both sides of chicken breast with sea salt, black pepper & Italian seasoning.
- Add seasoned chicken to frying pan, brown both sides over medium-high heat.
- Drizzle greens with combined olive oil, lemon juice, sea salt & pepper.
- Serve and top with diced avocado, feta, almonds & sliced cooked chicken.
