Boiled Eggs on Ryvita Biscuits

Light, easy and nutritious, one of my all-time favourite breakfasts!

  • 2 free range eggs boiled as you like them
  • 2 Ryvita biscuits
  • Pure butter
  • Vegemite
  • 8 baby spinach leaves
  • Cracked pepper to taste


  • Scrape a thin layer of butter and vegemite on to the Ryvitas.
  • Wilt the baby spinach leaves under boiling water and pat dry. Place the spinach leaves and the vegemite on the biscuits and then top with slices of the eggs.
  • Sprinkle with cracked pepper and serve.
