Light, easy and nutritious, one of my all-time favourite breakfasts!
- 2 free range eggs boiled as you like them
- 2 Ryvita biscuits
- Pure butter
- 8 baby spinach leaves
- Cracked pepper to taste
- Scrape a thin layer of butter and vegemite on to the Ryvitas.
- Wilt the baby spinach leaves under boiling water and pat dry. Place the spinach leaves and the vegemite on the biscuits and then top with slices of the eggs.
- Sprinkle with cracked pepper and serve.
