Light, easy and nutritious, one of my all-time favourite breakfasts! 


  • 2 free range eggs, boiled as you like them
  • 2 Ryvita biscuits
  • Pure butter
  • Vegemite
  • 8 baby spinach leaves
  • Cracked pepper to taste 


Scrape a thin layer of butter and vegemite on to the Ryvitas.

Wilt the baby spinach leaves under boiling water and pat dry. Place the spinach leaves and the vegemite on the biscuits and then top with slices of the eggs.

Sprinkle with cracked pepper and serve.

Serves 1
Cooking and preparation time 5 minutes.
